Breakfast Sweet Potatoes

Left-over baked sweet potatoes are great with fried eggs for breakfast and are a southern tradition:

1. Remove skin from chilled leftover baked-in-skin sweet potatoes.

2. Slice potatoes lengthwise into 1/2 inch (approximately) slices.

3. Pan fry in bacon drippings.


Serve hot with fried eggs and bacon.

This has been a favorite breakfast on our ranch in north Florida for many years, where we used to get fresh garnets delivered all season long by our neighbor who grew them. Sure miss that.
The only problem with this is you have to bake several extra potatoes when you're making dinner as there rarely are any left for next day's breakfast in our house.
