Satsuma-imo sweet potato

I haven't tried very many types of sweet potato, but I love the Satsuma-imo (commonly known as Japanese yam) because it has a wonderful flavor and texture when boiled. It also has some heft to it- it's a bit more substantial than some other white varieties. It gives a very nourishing, healthful feeling when eaten :-)

Commonly pink to purple skin color and cream to gold inside. Compare to general sweet potato in US, Japanese sweet potato "Satsuma Imo" is more starchy and more sweeter. Also it is harder. Common recipes are baked or Tempra. I like using it in chicken cream stew or Miso soup. I hope this potato becomes commercially more accessible in US.
