Okinawan Sweet Potato

Okinawan Sweet Potatoes have a dry, fluffy, beautifully colored purple flesh that taste like maple syrup on pancakes. The potatoes are quite dense and satisfying. The history correlated with them is fascinating also. Indigenous peoples of Okinawa,Japan used to eat a diet of ~80% carbs and a majority of that was from sweet potatoes, presumably these and others like it. Knowing that makes me wish I lived there at that time, as these are that tasty and I would have no problem with consuming them daily.

Thanks for the history on these sweet potatoes! I ate some purple-flesh Japanese sweet potatoes last weekend. Delicious! I seasoned them with a bright curry blend that was a little gingery which I thought would actually taste better on beauregard sweet potatoes.
